Culinary Arts
This is a full time, four year, level 8 programme of innovative and dynamic culinary study. It is a revisioning of traditional culinary skills training to include a number of other disciplines such as food innovation, media and visual arts, food policy, speciality food production, sustainable practices and gastronomy.
The curriculum has been designed to bring students into the worlds of interdisciplinary learning, research and enquiry and the emphasis is less on training and more on holistic development in order that graduates will elevate current industry practices to a new dimension both regionally and nationally. Graduates will be empowered to become self-starters with passion and entrepreneurial traits.
International and Industrial Experience
Central to the degree is a year combining international study and international work experience. In Year 3 of the programme, students study for a semester at one of our partner colleges in Canada, France, Northern Ireland, Spain, The Netherlands, or the USA. They also spend a semester on international work placement in a country of their choice. This opportunities offers our students first-hand experience of international standards and best practice in culinary operations and equips them with the skills necessary to be highly effective in the global workplace.
Hospitality Management
The term Hospitality Management is most commonly associated with Hotels but also includes careers in entertainment venues, restaurants, bars and casual-dining, event management and contract catering.
This four year course is designed to equip graduates with a broad range of business skills combined with a thorough knowledge of the hospitality environment. During the first semester of year 3, students are required to complete a placement organised by the college in a hospitality organisation in Ireland or abroad. Students are actively involved in the decision making process in order that their choice of work experience is appropriate to their career aspirations and interests. This work experience allows students to gain real experience of working in a hospitality business.
Past companies who have been involved in the placements include: Four Seasons, Hilton, Westin, Mount Juliet Conrad, Park Hotel Kenmare, Jurys-Doyle, Tower Hotel Group and many more
Tourism & Hospitality Services
This course is a three-year full-time level 7 programme designed to provide students with the knowledge and skills required to perform effectively at the supervisory level within the tourism and hospitality services sector. The programme aims to provide students with strong operational, business, management and marketing skills to enhance their supervisory expertise.

Global Hospitality Management and Intercultural Communication
The MSc Global Hospitality Management and Intercultural
Communication is designed for those who would like to develop
and strengthen their knowledge and skills in human resource
management (HRM) while becoming competent in intercultural
communication. The programme aims to prepare graduates by
developing their understanding of different cultural contexts
and viewpoints while attaining valuable business skills thus
enabling graduates to work successfully in various sectors
across the global business market. Modules include: Global
Business and International HRM, Intercultural Communication

Business and Hospitality
The MSc in Business and Hospitality is designed for those with
hospitality/business qualifications or experience who wish to
develop their knowledge of hospitality systems, trends and
business applications to an advanced level. The programme is
designed as a specialist course which assists students in blending
their existing talents with the advanced hospitality and business
skills and knowledge needed to manage a modern hospitality
organisation. Modules include: Global Business and International
Human Resource Management (HRM); Project Management;
Information Technology for Hospitality; and Performance and
Revenue Management.
Culinary Entrepreneurship
The aim of this course is to provide knowledge and expertise from a practical and theoretical perspective that will assist to equip food or culinary businesses with the strength to further grow, innovate and develop business operations to meet future demands.
The course provides an in-depth theoretical knowledge base, anchored in the culinary disciplines and supplemented by knowledge of the hospitality and wider food sector. The course provides for a high level of artistic abilities in the creation of innovative food products and food business concepts, with an entrepreneurial mindset.
Students will require €450 approx. for class materials, books, uniforms, safety shoes, etc in the first week of college.
Hospitality Supervision
The aim of this new programme is to prepare students for a variety of supervisory positions in the hospitality industry, which provide either food, beverage or accommodation services. The programme will provide the student with a unique blend of practical application and theory.
Students will acquire a range of skills such as Food Preparation, Restaurant Service, Accommodation Service, Bar Service and Front Office Service, Business Operations and Communications. The latter stage of the programme will help develop attributes in the areas of Supervisory Management, Revenue Management and Marketing. The programme includes work placements in Year 2 and Year 3. Students have the option to complete their work placement with world-renowned resorts in many international locations including Cape Cod, Paris, London and Dubai.
