Hospitality Management** (September/January Intake)

Hospitality Management

This one-year conversion course provides an opportunity for students who have successfully completed an ordinary degree (level 7 – NFQ) or honours degree (level 8 – NFQ) in a different discipline to attain an honours degree (level 8 – NFQ) equivalent in a further single year of studies. The individual modules run in conjunction with existing modules on our degree courses. The offering of the Higher Diploma in Hospitality Management course further develops the learners’ key skills, their strategic ability and introduces learners to the hospitality management discipline. The three-month industry placement forms an integral part of this course.

Event Management

Event managers are needed to generate event ideas and facilitate them professionally. From a global event like the St Patrick’s Festival to regional food and sports weekends, corporate events, conferences, public celebrations and festivals, event management has evolved into big business. This growth nationally and internationally has been fuelled by the increase in the number, size and sophistication of events. Ireland has a thriving events sector which hosts exciting and varied events and festivals throughout the year.

In this four-year course, you’ll acquire practical and theoretical skills in all aspects of event management. You’ll become knowledgeable in areas such as event planning and design, marketing, sponsorship, staging and health and safety. You’ll be equipped with the knowledge, understanding and professional management skills you need. As well as event-specific subjects such as Event Industry Studies and Event Planning and Production, you’ll also follow a broad business course with subjects such as Management, Marketing, Finance and Law. European languages are increasingly important in the world of work.

Culinary Science

Would you like to learn how to create appetising food products and dishes through scientific understanding and the application of culinary skills? This course will prepare you for a career as a development chef or food product developer, as well as for other roles in the manufacturing, retail and related food industries.

This course is a joint degree offered by the School of Culinary Arts and Food Technology and the School of Food Science and Environmental Health.

Culinary science is a rapidly growing discipline. The food industry needs to satisfy the demands of consumers requiring value-added, high-quality, tasty food.The first two years of the course will provide you with practical skills in kitchens, food science and nutrition in our labs. The kitchen skills focus on professional cookery, whereas science focuses on food research and experimentation. Years 3 and 4 focus on the everyday needs of a dynamic concept/development chef. Overall, you’ll gain skills and knowledge in the sciences and culinary arts which will be applied during two specific work placements. You will engage in a food product development research project which will involve creating a product in an industrial kitchen and analysing its properties in a range of specialist laboratories.

Culinary Entrepreneurship

Do you want to operate your own culinary business? This course will equip you with the knowledge and skills to develop your own artisan food products, along with an understanding of the food-related industries.

The global Agri-Food and Beverage (AFB) industry is a growing competitive sector that underpins Ireland’s engagement in food and drinks trade. The AFB sector is ‘diverse consisting of food suppliers, manufacturers, producers, processors and retailers. It is constantly evolving to adjust to the tastes and needs of consumers and the increasing global demand for a wider variety of higher quality product.’

Ireland’s status as a major food-exporting nation provides for graduates of the BSc (Honours) in Culinary Entrepreneurship with excellent career opportunities. The course is viewed as extremely positive by national and multinational companies because it offers students the knowledge and practical skills necessary to work in this dynamic industry world-wide. The BSc course builds strong links between; new food product development, wine studies, culinary practice, food legislation and business. Within the food industry, students will have the opportunity to work in areas such as food innovation, health promotion in the food trade and in the wider food and beverage sectors.

Culinary Arts

Do you want to pursue a career in the culinary arts sector, and establish a base for further professional career development? In this course, you can acquire the practical skills and knowledge that you’ll need as a modern-day professional working in a kitchen environment.

This is a three-year course which has three main pillars of study and practice: Culinary Arts, Applied Food Science & Wellness, Food Culture- technology & learning. There is one elective option( Creative desserts & Bakery OR Artisan Breads). The unique embeded focus of ‘health and wellness’ within the course is integrated using an applied approach and ‘hands-on’ learning.

An industry placement of 16 weeks (approx. 400 hours) during and/or following Year 1 (but before starting Year 2) will give you lots of practical, real-world experience.

Baking & Pastry Arts Management

Students will develop comprehensive and advanced knowledge aimed at enhancing their skills as entrepreneurs, artisans, managers or future focused bakery innovators. This course aims to empower students with a distinctive set of advanced bakery skills alongside culinary business development knowledge. As part of the course students will develop specialised insights regarding food regulatory affairs (packaging, labelling and safety legislation) in addition to advanced bakery business / market insights. This will empower individuals to engage better with consumers and utilise evolving bakery market demands for commercial benefit. As part of this course students will also be designing innovative mock-up / prototype bakery products and responding to virtual business/ new business project briefs. learners will also be presented with new and exciting innovative ingredients whilst enhancing their knowledge regarding safe use of foodstuffs and handling of allergens in the bakery industry and its many related products.

In addition to the above, students will develop sugar craft skills and fine piping techniques as well as chocolate work skills and presentation techniques alongside commercial baking procedures and methods. To complement their business and market knowledge, students will be encouraged to develop their professional and academic skills also via bespoke research.Learners will be empowered by enhancing their research skills as professional academic practitioners with professional research on their chosen subject guided an academic supervisor.It is envisioned that students will become empowered and knowledgeable leaders as well as future bakery / culinary ambassadors resulting from the specialised knowledge gained from this exciting course.

International Business Management (International Tourism and Hospitality Management)
